Tomato & Goat Cheese Salad

Yields 4 servings



2 Cherokee Purple tomatos

1 Sunray Tomato

1 Beefsteak tomato

1 small white onion, sliced

¼ cup fresh oregano

1 tbsp olive oil

2 tbsp balsamic vinegar

¼ tsp black pepper

½ cup goat cheese, crumbled


1. Slice all of the tomatoes into think slices, distribute around a large oval plate.

2. Sprinkle the tomatoes with slices of white onion and oregano leaves.

3. Drizzle the salad with olive oil and balsamic. Add black pepper evenly over the salad

4. Toss the goat cheese on top of the salad. Serve immediately.
