Strawberry Almond Pancakes

Yields 15 pancakes



Ingredients:

2 eggs

2 cups rolled oats

2 cups almond flour

2 tsp baking soda

1 tsp baking powder

1 cup strawberry yogurt

1 tsp vanilla extract

½ cup sliced almonds

2 cups coconut milk


Directions:

1. In a large bowl, add all of the ingredients together. Mix using a fork until ingredients are well combined.

2. On medium heat, using a non-stick pan add 1/2 of the batter to the pan.

3. Cook each side of the pancake for about 2-3 minutes or until golden brown.

3. Serve warm topped with fresh strawberries.
