Blueberry Banana Muffins

Yields 30 muffins


3 cups rolled oats

1 cup almond flour

1 cup white flour

1 tbsp baking powder

1 tbsp baking soda

⅓ cup chia seeds

2 cups vanilla & banana yogurt

3 whole eggs

⅔ cup coconut oil, melted

6 ripe bananas, mashed

½ cup fresh blueberries

½ cup pea protein (optional)


1. Preheat the oven to 350F.

2. In a large bowl add rolled oats, almond flour, white flour, baking powder, baking soda and chia seeds. Stir together until all ingredients are combined.

3. Add eggs, melted coconut oil an mashed bananas to the dry ingredients. Stir gently until all of the dry ingredients are well combined.

4. Add the fresh blueberries and mix together.

5. Optional: Mix in pea protein to the batter for extra protein.

6. Add muffin liners to the muffin tray. Add the batter to the muffin liners, filling each muffin to the top.

7. Place the muffin trays into the oven and bake for 25 minutes. Let cool and enjoy!
